I have to confess these are not sugar-free. But they are a lovely treat. They are very much like a shortbread. They melt in your mouth. I keep the roll, raw in my freezer for when guests are about to arrive, thaw slightly (just enough to be able to slice) and then slice and bake. Mine never look perfectly round or the exact same shape, but that's how I work ( differently not a perfectionist)

While the pumpkins are cheap I have been pureeing them and freezing in bags. This recipe has no flour and so easy to make. If you don't love ginger like I do, add a pumpkin spice mix - nutmeg, cinnamon and cloves. Today I made 3 loaves and will freeze two of them.

If you need a quick dessert, this has to be the easiest I have ever made. I made 7 of these today for a group of people coming around for dinner. I made rhubarb and nectarine, pear, apricot and peach tarts. I will serve them with yogurt, but they would taste fantastic with my coconut cream and ginger ice cream recipe.

Some desserts taste better with ice cream, the problem with bought ice cream is, all the sugar added to it. Here is a recipe that is dairy free and you can control how much honey or malt rice syrup you use. I love ginger but you could change this to another flavour.

You only need a blender to make this.

Clafoutis is traditionally a fruit dessert, usually using cherries. I have used rhubarb from my freezer, which I picked from the garden last summer. I also added frozen raspberries, because they are not in season in NZ right now.

Facts

- You don't need white sugar when making a meringue, use runny honey or malt rice syrup.

 - coconut flour works real well when thickening liquid for a sweet treat. You stir it in, straight (no mixing with water first) and it does not seem to give the fruit a coconut flavour.

I love this light dessert, with the soft pick rhubarb, showing off.

This recipe is not gluten free but only the base is gluten and with no processed sugar used, It is not overly sweet. I have used honey but you can use rice malt syrup.

I have made four tarts, two round and two long tart. I  x 3 the recipes, only because I have a dinner party tonight. I had leftover dough mixture (enough for another tart) so I have wrapped it up and labelled it, and into the freezer, it goes for another day.

Why apple and rhubarb - well, this is what is in my garden. You could use apricot, pear etc

When I am having a few around for dinner I love to cook a cake for dessert. It is so much easier and not being overly sweet, this cake finishes off a lovely meal with friends.

This recipe makes two cakes - You can halve this recipe to make one. I freeze one cake, sliced, for another day if I don't need it straight away. I usually make more than I need, because as I say, ''My freezer is my favourite appliance in my Kitchen (ok, maybe my oven)'' It is full of real, unprocessed food that has been processed in my kitchen.

Don't be scared by the word ''Gluten Free '' seriously, some of you need to give gluten a break once in a while. Buckwheat flour is one of my favourite flours. It is a great protein and very filling. Easy to buy in supermarkets.

Remember the last time you ordered Sticky Date Pudding in a restaurant. If you are were like me, you would have found it, sickly sweet. I would not even order it now if it was on the menu. It is loaded with sugar. If you have watched the ''Sugar Film'' you differently would not.

This dessert is honestly the most amazing ''sweet treat'' you could ever eat. I have served this with coconut yogurt that I make. (recipe coming soon )
