I love a quick and easy recipe that is filling and delicious. The base is a nice change from a pastry and a lot healthier. I love picking green vegetables from my organic green house in Winter. Washing them well and making sure there is no slugs in them. The eggs are from my chickens.
Who does not love a curry. This is our Friday night dinner. It was so quick to make, but then I did have the chickpeas cooked and ready to go. Don't be afraid to use chickpeas. If you have never cooked with them, this would be the best way to use them for your first time.
If you are feeling like a meat free meal, try these patties. We loved them and found they were fairly moist, this is because of the raw grated beetroot mixed in. They are very filling and were also enjoy for lunch the next day.
We love hash browns and this sure makes a healthy dish for kids. They would even, probably like to make them. Using Parmesan cheese would give these a lovely flavour, but I used what I had - tasty hard cheese.
This is by far one of our favourite pies for Winter. All the vegetables used are from my green house and the eggs are from our chickens. Maybe that is why we love it so much.
Those that live in our home have decided this ''Shepherds Pie is better than the traditional mince recipe. Fantastic meal for a family.
We love a good curry. I had a large bag of cooked chickpea's in my freezer and decided to turn them into a vegetarian curry. I also made flat breads with a sourdough starter I have. This is a great Winter meal for a meatless night. Tastes great the next day as well.
I can honestly say, cooking meatless meals are so much more exciting than cooking your normal meat meals. These can all be frozen for lunches and instead of making the patties ( which can be used in burger buns ) you can just make bigger loaves.
When your kids won't eat, some vegetables, we all need to think smart about how to get them to love the ones they hate. I taught my kids in my ''cooking school'', how to make these, this week. They were excited about making them, maybe you could make them with your grandchildren or with your own young children.
Tonight we had these black bean patties and blind-folded you would not know if they were mince or not. They are filling, cheaper than meat and extremely healthy.
Nutrition in Black beans - folate, fiber, copper, manganese, vitamin B1, phosphorus, magnesium, protein and iron.
Most of us love a good lasagne, but making all the sauces can really be time consuming. This recipe takes no time at all, just make sure all your vegetables are pre-cooked and seasoned. If you eat this blind- folded, you would think you were eating pasta, not tortilla's. Easy for kids to create. You can also add cooked meat and plenty of herbs.
Risotto is a delicious and fun meal to make. There is, so many other vegetables you could use for flavour. The stock I used, was homemade, made from the bones of a chicken roast we had the night before. This meal takes about 40 minutes to cook and needs to be served immediately after.
Here is a meat free and gluten free recipe. In New Zealand, we eat far too much meat. I think it is important to add vegetarian meals to our weekly meal plan. You will still be getting your iron and protein intake, it will just be through plant base, not meat.
I made this Onion Souffle for an entree last week. It is creamy and rich to eat. The first stage of this recipe can be made in the morning of your dinner party and then stage 2 is made just before you are wanting to eat. It really is easy to make.
Glenn and I love pies. I was really excited to try this vegetarian pie and it sure met our expectation. We only eat meat about 3 - 4 times a week, so I am always on the look out, for some tasty ''meat free'' meals.
Here is my recipe, You can use other types of vegetables and the amounts you use does not matter, it depends on how many you are feeding. You don't even have to follow the way I did my layers. This is not a cake, so it can't fail.
For a meatless meal here is a great one. Make it for your family without telling them its beans and serve. They will love it. It is really filling.
This delicious crispy topped kale meal is full of the best food you can eat and thats vegetables. Easy to make. Enjoy
This risotto has 3 types of mushrooms. My favourite being the shiitake mushroom. The nutrition is amazing in this meal.
A hearty and healthy meal that will feed a large amount of people. This meal will increase your Iron level, give you fibre and is great for your heart.
A healthy vegetable Thai curry that is full of flavour and goodness. One of my families favourite. You can make it as hot as you like, using my Red Curry Paste, makes it even more delicious.
Love Mushrooms, you will love this pie. Full of nutrition, and a great hearty winter meal.
I have no other words to say but YUM YUM. This is the second time I have made this, this week. I changed it slightly, adding red wine to it. I know to some of you out there, you may say Moussaka is only made with Lamb mince and you are right, but sometimes we can break a few rules. To be honest I prefer it with Lentils. We have really learnd to love lentils. Our house hold, now eat meat only in the weekends (ok, we even break that sometimes) which then challenges me to come up with meals loaded with flavour and nutrition.
