Tonight my daughter Ashley and her friend made this Gourmet Meatloaf, actually, they made one each. They had a lot of fun adding in their own fillings. It was a real hit at the dinner table tonight, served with mashed potatoes and vegetables.
Many of you love to buy Dumplings, but here is your chance to make them yourself. These dumplings are the ones my students, in my senior class made. Easy to make and they really taste great.
Here is a very easy and simple meal we had on a Sunday night. I love the ginger cooked in with the beef. It gives a nice and subtle flavour that is a little different.
Roasting broccoli, cauliflower and capsicums are a lovely way to eat them. They keep their colour and have a much nicer flavour than steaming.
When was the last time you had meatloaf ?
It was such a long time ago for our family. I have forgotten how easy and delicious it is, and if you have any left over, it is great for lunch the next day. One of the girls that live with us, placed a slice in bread for her lunch and said it was amazing. Nothing like protein for lunch.
If you don't like corned beef that is bought from the shop ( there is plenty of you out there )- try this recipe. I am sure you will change your mind. Clearly this is not pink and did not start off slimy. No injecting and nasty additives. Keep it clean :)
I love lamb and Moroccan dishes. They are always so full of flavour. This recipe is really quick to prepare and loaded with flavour. I slow cooked it in the oven on low for about 7 hours, and then served it with homemade hash browns and a raw beetroot salad.
My goal is for my family is to buy only meat that is grass fed, organic and no antibiotics involved.
This recipe is made with miso. Miso is fermented (probiotic) soya beans, and it is really important to read the ingredients on the packet of your Miso paste. MSG is used for flavouring, (monosodium glutamate) It is the glutamate that is a danger to your health - stay away from it. Around the world soya beans are being genetically modified. I have found a supply in New Zealand that doesn't have all those nasties.
Long and slow is the best way to cook a large piece of meat.
This is a simple way to cook lamb. No added unnatural flavours.
Who does not love Winter and crockpot meals. Throwing all your ingredients into a crockpot and then going out for the day, come home, and it smells like MAMA'S been in the kitchen all day.
I will be sharing a lot of recipes for the crock pot. Time to stop working so hard in the kitchen. If you don't have a crockpot, just go and buy one. I usually cook on low for the longer period of time, just in case I get caught up in town for longer.
Freezer - A large freezer should be one of your best friends in Winter. When you are having a ''feel like staying in the kitchen day'' Prepare a whole lot of RAW crockpot meals and place them in a freezer. The night before you just, take out a RAW meal and thaw overnight and then tip it into the crockpot and turn it on.
Lasagne without the pasta ?
- When you feel like a lasagne but don't have any sheets of pasta and you have run out of flour to make pasta.
- When you don't want any gluten in your meal because you have already had bread today.
or when you have heaps of marrows / courgettes in your garden and tired of eating Ratatouille.
Well, this is the meal for you.
These tastie Krofta's are delicious with mint, parsley, cumin and allspice. Lamb mince is normally use but I have used beef mince. We made burgers with them and took them down to the lake for a family picture.
Wagyu Bavette Steak is a French cut from the flap off the T-bone. Wagyu is a marbled steak that is loaded with flavour. Polenta chips are a fun and easy option for a meal. I served this meal with brocilli, baked tomatoes, grilled aspragus and sour cream and chives.
No more boiling your brussel sprouts, It is roast or raw. (I never eaten them raw) I usually just roast them with a little coconut oil and season, but I have found a chorizo sausage that has natural flavouring instead of the orange colour that is soooo bad for you.
For a fun meal with your family, these dumpling's are so easy. They take time to fold but just put some good music on and enjoy. Cover and place in the fridge until you are ready to poach in simmering water. They can also be fried in a little oil for texture.
If you love meat, you will love meatballs, especially kids. I have used tin tomatoes, the trouble when using acid tomatoes is they need to be sweetened. I will be growing acid-free tomatoes this summer. I have used a grated apple and sticks of carrots to do this. This meal is so quick to make. I cooked rice noodles to go with it and stir-fried bok choy.
A slow cooked meal using shin beef, with a base of vegetables. Eaten with pasta this is so good.
Best ever Rustic Herb Stew, well that is what my husband says. Simple and full of flavour. Served with polenta and broccoli.
This Korean beef recipe is full of flavour. Place in a crock pot and sit down and relax. Add to brown rice or mashed potatoes.
Using left over lamb or beef roast, these croquettes are cruncky on the outside and soft in the middle, served with mustard.
On a cold winter day you either want soup or a stew. Well that is want I like. There is nothing like a good hearty stew with home grown potatoes. I love smoked paprika and have to try not to use it to often.
It is so nice to have a homemade pie every now and then. So many cultures don't know what a meat pie is. Try my homemade tomatoe sauce with it. Thats how we eat pies in New Zealand. Oops I forgot, don't forget the mashed potatoes with it.
Sometimes we just need to be a little creative and surprise your family with your meals. This meal is really delicious and full of flavour.
