Indonesian - Serundeng
Serundeng - is a crispy spiced coconut with peanuts. You served with on or as a condiment to rice. It tastes sweet and salty. Eating serundeng brings back memories of my childhood. Our family had a lovely friend called Dee, she was from Indonesian and she was an amazing cook. I loved her serundeng it reminds me of Summer.

A sweet treat -
I remember buying something similar to this recipe at the bakery. Glenn always bought the apricot ones and I enjoyed the apple ones. I have replaced most of the flour with rolled oats and instead of white flour have used wholemeal flour. The sweetener is brown rice malt syrup ( no fructose) or honey can be used. Fruit is naturally sweet so does not need any more added to it.
Eaten as a dessert with unsweetened yogurt or as a slice for the lunch box.

Prune and Nut Truffles -GF
Christmas Time coming up and traditionally Truffles are made, but I find they are very sweet. This is my version of a Christmas truffles. This recipe is gluten free (as long as you buy rolled oats made in a gluten free environment if you are celiac, but rolled oats are GF.) there is no processed sugar added just natural sugars unless you are dipping the truffles in dark chocolate.
