Ginger, Pumpkin and Nut loaf - GF

Pumpkin without it tasting like pumpkin.

While the pumpkins are cheap I have been pureeing them and freezing in bags. This recipe has no flour and so easy to make. If you don't love ginger like I do, add a pumpkin spice mix - nutmeg, cinnamon and cloves. Today I made 3 loaves and will freeze two of them.

Ginger, Pumpkin and Nut Loaf Recipe

makes 1 loaf - line your loaf tin with baking paper

1 cup pureed pumpkin - cook pumpkin is water until tender, drain and place back on the element, on low to dry out without it going brown. Place a blender or mash with a fork. Cool.

1 cup nut butter - almond or peanut butter

2 tbsp honey- more if you like

2 eggs - whisked

1 tsp vanilla extract

75 gr finely sliced crystallised ginger

1 heaped tsp ground ginger

1/2 tsp baking soda

Method

Oven 180c

1 - Combine all the above ingredients with a whisk and pour into your lined tin.

Bake for about 50 - 60 minutes or until a skewer comes out clean

Don't tell your family its pumpkin, they will never know.
