Beetroot and Brown Lentils Patties - GF

If you are feeling like a meat free meal, try these patties. We loved them and found, they were fairly moist, this is because of the raw grated beetroot. They are very filling and were also enjoyed for lunch the next day. I served these with goats cheese and sour cream sauce (recipe below) and homemade sauerkraut.

Beetroot has so many benefits - 

1 - The deep purple colour is from phytonutrients. Research has shown the juice has reduced multi-organ tumors in animals and test's are being done for breast, pancreatic and prostate cancer in humans.

2 - The juice lowers blood pressure in a matter of hours. The natural nitrates in beetroots convert to nitric oxide in your body. This helps relax and dilates your blood vessels, improving blood flow and then lowering it.

3 - If you go to the gym or are off for a long walk, drink before, and beetroot juice will allow you to workout longer and boost your stamina.

4 - The juice will help fight inflammation, protect internal organs and improve vascular risk.

5 - Beetroots are high in immune- boosting Vitamin C, fiber and essential minerals. High in potassium and manganese which is good for you bones, liver, kidneys and pancreas.

6 - Betalin pigments in beets help break down toxins - they help to purify your blood and your liver.

Lentils are a low burning complex carbohydrate, they increase your energy and replenishes your iron stores. Great for women who are low in Iron. 

Beetroot and Brown Lentils Patty Recipe

Makes 8 large patties.

4 cups cooked brown Lentils - I buy these dried, soak for 2 hours or more, then simmer in plenty of water until soft. This takes about 1 hour.

2 raw beetroots - grated - this make the patties moist.

4 large garlic cloves - smashed

1/2 red onion - chopped finely

1 tbsp cumin

1 tbsp turmeric

1 tbsp Himalayan salt

Method

1 - In a food processor blend your cooked brown lentils until it combines together.

2 - Add to the lentils - garlic, onion, cumin, turmeric, and salt. Blend until well mixed. You will have to stop the machine every now and then to scrape down.

3 - Remove the mixture and place into a large bowl. Stir in your grated beetroot.

Taste and season more if it needs it.

4 - Roll into balls and then flatten, fry gently in a frying pan with coconut oil, until slightly crispy and warmed through. To stop these drying out, do not over heat them.

I served this with sauerkraut and goats cheese/ sour cream sauce, topped with roasted red capsicum.

Goats cheese/sour cream sauce  Recipe

250 gr sour cream

125 gr goats cheese - you can use cow feta if you profer.

1 small clove garlic - smash and chopped finely

1/4 cup fresh herbs

Method

Mix all together in a blender.

Store in the fridge for up to 1 week.
