Cauliflower Hash Browns - GF

We love hash browns and this sure makes a healthy dish for kids. They would even, probably like to make them. Using Parmesan cheese would give these a lovely flavour, but I used what I had - tasty hard cheese.

Cauliflower Hash Brown Recipe

Oven tray lined with grease proof paper

makes - 17

1 large cauliflower - cut into small pieces and blend in a food processor. If you don't have one use a grater. Place in a bowl and mix 1 tsp salt into you blended cauliflower. Leave for 20 minutes.

1 cup grated cheese - Parmesan or any other firm cheese.

2 eggs

4 cloves chopped garlic

2 tbsp mixed dry herbs of your choice. - this is for flavour, you can, however, use spices of your choice. Fresh herbs can be used.

2 tbsp melted coconut oil

2 tsp salt

Method

1 - Once your cauliflower has been left for 20 minutes, place in a tea towel and squeeze out any liquid. I do this in two batches.

2 - Place in a bowl with all the other ingredients. Mix.

3 - Using an ice cream scoop, place balls on your prepared tray and then flatten into the shape of hash browns.

4 - Bake in the oven 200c for about 40 minutes or until golden brown.

Serve 

I served the hash browns with this vegetarian casserole.
