Here are two recipes I like to use when I make pastry. Both are really nice and very easy to make. It would depend on what ingredients I have in the fridge as to which one I use. There is something about making your own pastry that gives you pleasure and a joy when making it.
Flaky Pastry
350 gr plain or strong flour
pinch salt
210 gr butter - very cold butter, cut into small cubes
150 mls cold water
Method
1 - Place in a food processor and blend.
2 - Remove and rest in the fridge, covered for 20 minutes.
3 - Roll out and then fold into 1/4's.
- rest for 5 minutes.and then roll and fold again for about 5 times. This is an option if you want it light and flaky.
I usually make double and then freeze half of it for another meal.
Pastry
250 gr plain flour
200 gr butter cubed
pinch salt
1/2 cup sour cream
Method for Pastry
1 - In a food processor blend flour, salt, butter
2 - slowly add sour cream until a ball forms, remove, cover with plastic wrap and place in the fridge for 20 mins
This pastry can also be frozen.
