I love a hot loaf, sliced with a slab of butter on it. No whisking and fussing around with this recipe. I also know I have one in the freezer for our next trip on the road.
Date, Ginger and Molasses Loaf Recipe
Line 3 loaves - two for the tins and one for the freezer.
450 gr boiling water
110 gr butter - cubed
3 tbsp molasses
220 gr chopped dates - making sure there are no pips
2 tsp bicarbonate of soda
450 gr wholemeal flour
2 - 3 tbsp ginger powder
1 cup chopped walnuts
2 eggs - whisk in a small bowl
Method
1 - In a medium size bow, add your water, butter, baking soda, molasses and dates. Mix until the butter has melted. Cool.
2 - In a large bowl, mix your flour, walnuts and ginger.
3 - Add the eggs to the butter mixture
4 - Stir in the wet ingredients, into the dry ingredient.
Pour into your prepared tins
Bake 180c for about 1 hour or until a skewer comes out clean
Serve while still warm or slice and warm in the oven and serve with butter.
