Quick, easy and delicious. These light and fluffy scones are made in no time when your unexpected visitors arrive and you don't have to be gluten intolerant, to eat them.
Gluten Free - Feta and Spinach Scones Recipe
makes about 9 large scones
5 cups gluten free flour
4 tsp baking powder
100 gr firm cold butter - grated
3 eggs - whisk
1 tsp Himalayan salt
1/2 tsp paprika
200 gr feta cheese - crumbled
2 1/2 cups unsweetened yogurt (or milk)
handful of mixed spinach, parsley and rocket - sliced
1 small onion - chopped very finely
Option - sliced sun dried tomatoes, 1 tbsp pesto
Method
1 - Mix your dry ingredients together.
2 - Add your butter, onion and cheese. Mix well.
3 - Add the yoghurt and cheese and fold into your mixture until the dry flour, has been mixed in.
4 - Stir gently in the spinach and rocket.
3 - Drop a large spoonful on a lined baking tray close together. This should make about 9.
Bake 200c for about 20 minutes or until cooked.
Once slightly cooled, pull scones apart. Best not to use a knife, pulled open the middle so you can butter the inside.
These scones are made in no time at all. Nothing heavy about these.
