Lentils -
Great dietary fibre,
Fantastic for heart health,

Lentils are a low burning complex carbohydrate, they increase your energy and replenishes your iron stores. Great for women who are low in Iron.
Preparation - Cover lentils with cold water and soak overnight. Next day strain of water and place into a pot, cover with water and simmer until cooked. Drain.
Important notes - Alway's keep cooked lentils in your freezer, ready for when you need, an easy meal.
- Don't tell your family it's lentils. They will just think it is mince, without the
greasy after taste in your mouth.
Puy Lentil Shepherds Pie Recipe
serves 6
5 large potatoes (or more) - they need to be cooked, drain and mashed with butter, milk and salt, for the top
1 cup grated cheese to, top the potatoes
Pie Mix -
1 onion - chopped finely
1/2 leek - chopped finely - option
4 large garlic cloves - chopped finely
1 tbsp cumin
1 tbsp ground coriander
1 tbsp curry powder
1 tbsp turmeric powder
1 tbsp Himalayan salt
2 tbsp Worcestershire sauce
2 tbsp soya sauce
4 sweet potatoes - diced small
4 carrots - diced small
1 cup cabbage - finely sliced
400 gr tin chopped tomatoes
vegetable stock - about 1 cup.
about 5 cups cooked puy lentils - I buy mine dried, soak overnight, drain, cover with fresh water and simmer for 20 minutes or until tender. Drain. I would then freeze what I don't need in a bag.
2 tbsp rice flour / mixed with a small amount of stock
Method
1 - In a large heavy ovenproof pot, melt oil and cook on low the onion and leek with the lid on, until soft.
2 - Add the garlic and spices. Cook for about 2 minutes, stirring.
3 - Add all the rest of the ingredients except the cooked lentils. Cook with the lid on until tender. Stirring every now and then. Add the stock if it starts to stick.
4 - Add the cooked lentils and heat through.
Mix up the rice flour and a little stock together. Pour into the pie mix. Cook for a few minutes.
Taste and add more flavour if it needs.
5 - Spread over your mashed potatoes and grated cheese.
Place in the oven to melt the cheese and brown the top.
Serve
Great meal for a freezing cold night.
