Spicy Plum Cake and Plum Ice Cream

We have a few plum trees on our property and one of them has hundreds of tiny plums, now covering the ground below. Great plums for kids, but with those hundreds of pips that you have to manually remove, I have, decided I need use them. I have made jam (made with chia seeds and honey) ice cream and now I am using them in this lovely cake.

I served this cake to my guest last night with plum ice cream. Recipe below.

Spicy Plum Cake and Plum Ice Cream Recipe

2 cups self - raising flour

1 cup almond meal - ground almonds

1 tbsp cocoa

1/2 tsp baking soda

1 tsp cinnamon

1 tsp ground ginger

1/2 tsp ground cardamon

1 cup honey

1 cup buttermilk - add 1 tbsp lemon juice or white vinegar -  leave 5 - 10 minutes.

1/2 cup olive oil

2 eggs

6 plums or more - sliced - I used tiny plums, so I used a lot more.

Method

1 - Oven - 180c 20 by 20cm slice tin with lined with baking paper

2 - In a large bowl, sift the dry ingredients together.

3 - In another bowl - mix the honey, milk, oil and eggs together.

4 - Make a well in the centre of the flour and pour in the wet ingredients.

     Stir gently to combine.

5 - Pour into the prepared pan. Top with the plums.

     Bake for about 30 minutes or until cooked.

 

Plum Ice Cream Recipe

6 frozen large banana's - Peel, slice and place into a bag and into the freezer.

1 cup chopped raw blended plums- you can add more if this needs more flavour.

Method

1 - Place into a food processor. Blend until smooth. Using a spatula to scraping down the side by  stopping the machine every now and then.

2 - Place in a container with a lid and freezer until ready to serve. 

This mixture will go very hard once frozen. If this happens, you will need to thaw until soft, mixing well, before serving.
