Chocolate Seed Bars

 I hope your year has started off well. I have taken a while to post a new recipe, but If you are on my Real Food Now - facebook, you  would have seen I have been very busy in my vegetable garden and also organising my cooking class.

 I love this slice. I think I have made it 3 times in the last month. I keep them in the freezer, if friends come over for coffee or I need some energy, there they are, waiting for me.

Chocolate Seeded Bar Recipe

tray - 25 cm by 38 cm

3 cup sunflower seeds

3 cups pumpkin seeds

3/4 cup chia seeds

3 cups small organic rolled oats

1 cup sifted cacao or cocoa powder

500 gr honey, rice malt or maple syrup

6 tbsp coconut oil

Method

1 - Line a slice tray with grease proof paper.

2 - Place the sweetener and coconut oil in a large pot and bring to a boil, now simmer for about 5 minutes, making sure it does not boil over.

3 - In a large bowl, place all the other ingredients in and mix.

4 - Pour in your syrup and quickly stir, then pour into your tray. Press down with damp fingers, so it does not stick to your fingers.

Place in the fridge, once firm, slice and then keep in the fridge or freezer.

This slice is not the cheapest to make. But it is filling and by keeping it in the freezer it seems to last longer.
