When your kids won't eat, some vegetables, we all need to think smart about how to get them to love the ones they hate. I taught my kids in my ''cooking school'', how to make these, this week. They were excited about making them, maybe you could make them with your grandchildren or your own young children.

If you double this recipe they can then take them to school. 

Vege Cakes Recipe

lined muffin tin - makes about 12 or I used mini loaf tin which make 8

1 small head of a broccoli or cauliflower

Bunch fresh herbs - your choice - chives, dill, mint, parsley, coriander

2 eggs

125 gr grated cheese

Himalayan salt and pepper

Method

1 - Place the broccoli in a food processor and blend until it forms a crumb. You could use a knife and chop really finely. Place in a large bowl.

2 - Mix all the other ingredients together. Taste it raw, to make sure you have enough seasoning, which includes the herbs.

3 - Place spoonfuls in lined muffin tin holes. Press down.

Cook at 180c for about 20 minutes or until they spring back when you press on them.

I used my mini loaf tin instead of a muffin tin.
