Lemon and Passion fruit Loaf - GF

Two ingredients I really love is lemon and passion fruit. Unfortunately, passion fruit is not in season at the moment but it does now come in a small tin. (with added sugar) 

This Gluten free loaf is easy and freezes well in slices.

Lemon and Passionfruit Loaf Recipe

Oven 170c  - loaf tin, lined with grease proof paper

250gr butter

1/4 cup honey or rice malt syrup

3 eggs

1/2 cup passionfruit - mine has come from a tin because they are not in season 

2 lemons  - zest

200 gr ground almonds

1 tsp baking powder

Syrup Topping - heat in a small pot and stir to combine.

1/4 cup honey or rice malt syrup

1 Lemon - juice

Method

1 - Beat the butter and honey together.

2 - Add slowly your eggs - one at a time.

3 - Add the rest of the ingredients and beat till just combined.

4 - Pour into your tin and bake for 40 minutes.

5 - Check it is cooked by using a skewer and if it comes out clean pour over your syrup and 

cool in the tin.
