If you need a quick dessert, this has to be the easiest I have ever made. I made 7 of these today for a group of people coming around for dinner. I made rhubarb and nectarine, pear, apricot and peach tarts. I will serve them with yogurt, but they would taste fantastic with my coconut cream and ginger ice cream recipe.
Easy Fruit Tart Recipe
makes 1 - serves 4
800 gr tin fruit - drain through a strainer.
1 square sheet, sweet pastry
1 tsp Cornflour
Spice of your choice - nutmeg, cinnamon, mix spice
Option - nuts - walnut, sliced almonds
Method
1 - Lay your sheet of pastry on a lined baking tray.
2 - Sprinkle a teaspoon of cornflower on the base, in the middle.
3 - Tip on top, leaving a gap around the edges, your fruit. Sprinkle nuts or spice on top.
4 - Fold and pinch, in the sides, so they meet the edge of the fruit.
5 - Bake for 30 minutes or until the pastry is cooked.
Sprinkle on the cornflour.
Add the fruit, spice and nuts.
Fold in the pastry.
Bake until the pastry is cooked.
This one is pear and nutmeg.
