Salmon En Papillote - GF

En Papillote is French, to cook in a bag. I love cooking fish this way because it keeps all the juices in and everything is steamed together. I love it how you can prepare it all in the morning and 20 minutes before you are to eat you place it in the oven.

Salmon En Papillote Recipe

Oven 180c - cook 20 minutes before serving. You can place them ready in their bags in the during the day and keep them in the fridge.

1 large salmon fillet cut into enough portions for your family

Pesto - 1 tbsp per portion - I make my pesto in Summer when my basil is ready. I make up the pest and freeze in ice cube containers and then into bags.

lemon - 1 slice per portion

whole baby green beans - 1 handful per portion

Spinach - 1 handful per portion

Himaylan salt and pepper

Extra virgin olive oil

Grease proof paper

Method

1 - Lay your paper out and place your spinach then your beans - season with oil and salt and pepper.

2 - Lay the fish on top and spread on the pesto. Dribble oil over top and season. Lay a lemon slice on top.

3 - Fold your paper over the fish and seal.

4 - Place on an oven tray and bake for 20 minutes.

Serve straight away.
