Easy Meat Loaf

When was the last time you had meatloaf ? 

It was such a long time ago for our family. I have forgotten how easy and delicious it is, and if you have any left over, it is great for lunch the next day. One of the girls that live with us, placed a slice in bread for her lunch and said it was amazing. Nothing like protein for lunch.

Easy Meat Loaf Recipe

Oven 180 c and a greased large loaf tin

1 kg lean beef mince

3 onions - chopped finely

2 tbsp dried thyme

2 tbsp tomato paste

4 tbsp balsamic vinegar

2 large eggs

1 cup fresh bread crumbs

2 tsp Himalayan salt and 1 tsp black pepper

3/4 cup tomato paste for the base

Method

1 - In a fry pan with a lid, melt the oil and cook on low the onions until they are soft.

2 - Add the thyme and cook for 1 minute. Cool.

3 - In a large bowl, add the beef, bread crumbs, 1 tbsp tomato paste, eggs, balsamic vinegar, salt

and pepper. Mix well, but don't over mix.

4 - Add the onions to the beef and mixture.

5 - Pour the tomato paste in the base of your loaf tin and place the mixed beef mixture on top.

6 - Cook for 1 hour or until the middle of the loaf heats up to 72 celsius.

If your meat was not lean, there maybe a lot of fat in the tin. Before removing and cooling your loaf, pour out any fat.

Cool slightly before tipping the loaf upside down onto a chopping board or large plate.

I served sliced on cauliflower puree and raw beetroot salad.

I blended some fresh wholemeal bread in the blender to make bread crumbs.

Best to chop your onions smaller than mine. Cook them on low until soft.

Pour your tomato paste into your greasy loaf tin.

Sit your mince mixture on top.

Cool and then slightly tip your tin to pour out any extra fat, before removing your loaf.

Tip upside down onto a plate or board. 

 I served my loaf with cauliflower puree and raw beetroot salad.
