Sometimes we just want an easy meal on a Friday night. This is one of those, and kids love it.
I make my own, baked beans. I even buy the dried beans, soak cannellini / navy or haricot beans overnight and then simmer them for 1 - 1/2 hours, drain them and into the freezer for the next meal.
If you are wanting a protein that is not meat, then beans are it.
Hash Browns and Baked Bean Stack Recipe
6 Hash browns - recipe below if you are making them.
6 cups baked beans - recipe below if you are making them.
2 handfuls of mixed greens - spinach and kale - sliced
8 eggs whisked with 8 tbsp milk (any type of milk)
1 - 2 cups grated tasty cheese
Method
1 - Lay your hash browns along the base.
2 - Pour over your baked beans
3 - lay on top your greens
4 - Pour over your egg and milk mix.
5 - Sprinkle over your cheese
6 - Bake in the oven until it is, heated through and the cheese is golden brown.
Baked Bean Recipe
6 cups cooked cannellini / navy or haricot beans
1 onion - finely chopped
1 handful of fresh thyme or 1 tsp dried
800 grm tomato puree
2 cups water
1/2 tsp cinnamon
1/4 tsp ground cloves
1/4 tsp allspice
1/4 tsp paprika
1/2 tsp mustard powder
1 tsp Himalayan salt
4 tbsp apple cider vinegar
4 tbsp honey if you do not want to use honey you could sweetener it with grated apple or carrots.
Method
1 - Cook onion in oil on low with the lid on, until soft.
2 - Add all the rest of the ingredients. Bring to the boil and then turn it down to a simmer with the lid off. Cook for 40 mins or more.
Taste and season.
Hash Brown Recipe
6 large potatoes - grated
1 onion - grated
1 tsp garlic salt
3/4 cup flour
3 eggs
Himalayan salt and pepper
Coconut oil for frying
method
1 - Rinse the grated potatoes and squeeze dry. ( a lot of liquid will come out, best doing this over the kitchen sink)
2 - Mix in the onion, flour, salt / pepper and eggs.
3 - Heat a fry pan and melt oil. Place spoonfuls of the mixture, 1/2 inch thick. Cook until brown and then flip over. Cook about 5 minutes per side.
You could also pour the mixture into a large greased oven dish and bake until golden brown and cooked through. Cut into any shape your like. These can be frozen in the shapes and sizes your need.
Lay your hash browns on the base of your dish. I just cut my huge hash brown I made, to fit in the dish. Left overs were eaten for breakfast. Yum.
Pour over your baked beans.
Lay your greens over top.
Pour over your egg mix.
Next your cheese.
Bake.
Tasty and delicious.
