Glenn and I love pies. I was really excited to try this vegetarian pie and it sure met our expectation. We only eat meat about 3 - 4 times a week, so I am always on the look out, for some tasty ''meat free'' meals.
We were in the England recently and we tried our first Cornish Pasty at St Ives. We loved them, but I found in other places around England, they seemed to be all about the pastry, not the filling. I enjoy eating a crunchy flaky pastry, but for me, it is about a generous amount of filling and the pastry.
Curry Lentil Pie Recipe
Makes 4 small pie's
3 tbsp butter
1 onion - chopped finely
1 large kumara - sweet potato cut into small cubes
Himalayan salt and pepper
1 tsp cumin
2 tsp curry powder
1 tsp turmeric
1 tsp garam masala
1 tsp chopped coriander
2 tbsp plain flour or rice flour
1 cup warm whole milk or vegetable stock
1 1/2 cups cooked puy lentils - soak overnight and then cover with water and simmer until tender then drain.
1 cup green peas
Pastry - makes 4 small pie's, you can double this recipe and freeze for another night.
250 gr plain flour
1/2 cup sour cream
200 gr butter - cubed and cold
Glaze - milk, cream or egg or glazing your pie's
Method
1 - Place all the pastry ingredients into a food processor and blend until well mixed. Cover and into the fridge for 20 minutes.
2 - In a heavy base pot add your butter, onion and sweet potato. Cook on low with the lid on until they are all soft.
3 - Add your flour and spices cook for 3 minutes, stirring.
4 - Whisk in your warm milk. Cook on low with the lid on for 10 minutes. Checking it does not stick on the bottom.
5 - Add your lentils, taste and season
Assembly
1 - Roll out your pastry, for a top and bottom for each pie tins.
2 - Line the base and fill each base with your filling. Wet the edges with water and place the pastry top, on top and pinch the edges together.
3 - Brush the top of the pies with either milk, cream or egg and using a fork pick the top.
Bake for about 40 minutes or until the base is cooked.

Wet the edges and then place a top on. Pinch edges and prick the top. Glaze with cream or egg.
