Chicken and Jasmine Rice Recipe

Glenn and I recently spent 3 days in Singapore, as a stopped over. I have, to be honest, the food there did not excite me. Now, I love Asian food and the reason is because it is colourful, fresh to eat, real flavours (most of it), It should not be greasy, like I found the food in Singapore. It did not go well with my gallstones ( which I have not had pain for a few years, since I changed the oil I cook with )

A surprise for me and maybe you, I am using  white rice. I would only normally use brown rice, but to get a real Thai flavour I have broken my rule and gone with Jasmine rice.

Please try this, honestly, the flavour that comes from the ginger, garlic and stock is totally amazing. I made this for 13 people this week, and one of the guys said it was the best rice he has ever tasted. The fragrant that came out of my kitchen was fabulous. ( best not to freeze this meal)

Chicken and Jasmine Rice Recipe

serves 4

4 chicken breast - remove skin or boneless chicken thighs

3 cups Jasmine rice - rinsed

4 1/2 cups chicken stock

good size fresh ginger -  see photo below.- peel and slice

one whole bulb of garlic - peel each of the cloves

Garnish - fresh coriander and sliced spring onions

Method

1 - In a large fry pan or a heavy base pot with a lid, bring  your stock with the ginger and garlic to a boil.

2 - Add your rice.

3 - Place your chicken on top.

4 - Place the lid on and simmer or about 40 minutes or until the rice and chicken is cooked.

5 - Serve with coriander and sliced spring onion on top.

I then served this with stirred colourful vegetables.

I find, the best way to peel fresh ginger is to scrape the skin off with a teaspoon. Next slice your ginger thinly.

Peel your garlic.

Bring stock, garlic and ginger to a boil.

Add your rice and place the chicken on top. Cover.

Simmer until the rice and chicken is cooked.

Prepare your garnish.

Serve with colourful vegetables.

Singapore - maybe we were not impressed with the food, but the scenery at night was beautiful, full of energy and excitement. I love how so many of the locals come out to run and exercise when the temperature drops slightly.
