On the Go Bars

This will be my last post on realfoodnow.nz, for recipes for about 6 weeks. Glenn and I are heading off overseas, for an adventure in a Motor Home. An English couple used our Motor Home  in January / February and we are off to use their's. Similar to a house swap, but better. :)

My last (until September) Fermenting class was on Saturday and a lovely lady called Karen, asked if I would like to go to her block of land in Cromwell, to pick Almonds. Glenn and I had never picked Almonds before, ( we do have an almond tree, but it is still young) So the photo below is of her almonds. Some are soft shell and the others are in a hard shell. ( I did not know you could get both), thanks Karen :)

I wish I could take these bars with me. But I will be leaving them with the girls in our home.

On the Go Bars

Oven tray lined - around 8 by 12 inch (I used a really large tray, but did not fill it up)

3 cup organic rolled oats

1 cup ground almond meal

1/2 cup coconut

2 tsp cinnamon

1 cup seeds - flax, sesame, sunflower or pumpkin seeds

1 cup nuts - either -  almond, walnuts, brazil or any other kind of nuts.

1/2 cup apple puree - cut up some apples and cook - and then blend in a blender.

1/2 cup honey

4 eggs

1/2 cup extra virgin olive oil or coconut oil

2 cups either sultanas or finely cut up, dates.

Method

1 - Place all but the sultanas or dates in a food processor. Blend until it forms a paste.

2 - Place in a bowl and add your dried fruit.

3 - Pour onto your prepared tray.

4 - Bake for 20 - 25  minutes 

5 - Slice while warm and remove when cooled.

Walnuts, Almonds and Hazel nuts by the fire. :)
