Here is a recipe with a homemade pastry base, and a filling filled with vegetables and a lovely moist fresh smoked fish. This is a complete meal, very easy to make, you just need time for it to cook.
Smoked Fish and Vegetable Pie Recipe
Oven 200 c - 20 inch tin, lined with grease proof paper. A loose bottom tin is best, I used the paper to lift mine out.
Filling
500 gr freshly smoked fish - Mackerel or Trevally or any other smoked fish. Debone and flake or cut up small.
4 cups mixed vegetables - broccoli, pea's, carrots, celery, spinach, silver beet or chard, corn, spring onion, or any other vegetables you may have in the fridge. Cut them all the same size - small, (if you are using frozen, make sure they are thawed and drained well.
6 eggs - whisk
1 1/2 cups plain unsweetened yogurt
Parmesan to sprinkle on top
Pastry
250 gr plain flour
1/2 cup sour cream
200 gr unsalted butter
Method
1 - Place all the pastry ingredients into a food processor and blend until this forms a ball. Remove and rest for 20 minutes, covered.
2 - Mix the yogurt and eggs together.
3 - Place all the vegetables into a large bowl and add the yogurt mixture.
4 - Stir in your fish.
5 - Roll out your pastry to fit the base of your tin - going up the sides.
6 - Pour in the mixture and press down, sprinkle cheese on top.
Cook for about 1 hour or until the middle is set.
Place all the pastry ingredient in your food processor and blend.
Rest the pastry for about 20 minutes and then roll out to fit your pie tin.
Mix the egg into the yogurt and place all your vegetables into a large bowl.
Debone your fish and break it up.
Add every thing into your bowl.
Mix, press down into the pastry and sprinkle cheese over top.
Bake and then cool slightly before slicing.
