I love it when you grow cauliflower in your vegetable garden and forget about it for about 2 months, and you go out to pick leeks and find there are cauliflowers hidden in their huge leaves. Pure white with no signs of bugs having a feast. The huge leaves protect the cauliflower by folding their leaves around them. White butterflies may eat some of the outer leaves but the cauliflower is protected inside. They are organic and no spray or powder used on them.
This recipe is great for kids, so many vegetables and its creamy. The cauliflower is cooked in the sauce, so no boiling first.
Creamy Cauliflower and Pasta Recipe
1 large cauliflower - chopped small
1-litre of either almond milk, vegetable stock or 1/2 whole cows milk and 1/2 water.
bunch mixed fresh herbs or 1 tsp dried mixed herbs
1 onion - diced finely
Himalayan salt and Pepper
Pasta - any type or rice noodles
Option - this is when you look in your fridge and add to your sauce.
1 whole chicken poached or cooked in a slow cooker - remove the meat and shred into small pieces, use the bones to make a broth in a pot or slow cooker for your lunch tomorrow. (great for your gut.)
500 gr mushrooms - sliced
1 egg plant - cut into cubes
Parmesan cheese to add at the end.
Method
1 - In a large heavy base pot, cook your onion on low with the lid on until soft. If you are using dried herbs add them now and cook for a few seconds.
2 - Add your cauliflower and your liquid. I added almond milk. Place the lid on and cook on low until the cauliflower is cooked. Remove 1 cup of liquid, and add it back after it has been blended if it is to thick.
3 - Cool down and then with a stick blender blend until smooth.
4 - I then fried mushrooms and egg plant together with a little more dried thyme. Pour into your sauce.
5 - Add your chicken - taste and season.
Add your cheese now if you are using it.
6 - Just before serving, bring a large pot of water to the boil and drop in your pasta, cook by the directions on the packet. Drain
7 - Serve by placing some pasta on your plate and then ladle your Creamy Cauliflower over top.
Garnish with fresh herbs or cheese.
Chop your herbs, onion and cauliflower.
Cook onion on low with the lid on. Place the cauliflower in a pot with the liquid, lid on and cook.
Add your nutmeg and herbs, blend.
Cut up any other vegetables you would like in your dish, I used mushrooms and egg plant.
I then cooked them and then added them to the cauliflower.
I cooked a chicken the day before in the slow cooker. Separated the chicken and place the bones with carrot and celery in a pot and simmered for bone broth.
Serve your Creamy Cauliflower Sauce on a bed of pasta of your choice.
Place your bones in a pot or slow cooker with a few vegetables and simmer for about 6 hours on low. I cook mine in the slow cooker overnight. Broth is very good for losing weight, building your immune system and amazing for GUT HEALTH - especially for inflammation.
