Spicy Chicken Delight - GF

Spicy but not hot. I love spices, the flavour of this chicken is so good. Even your kids will love it. It is good to start teaching your children to love flavours, talk about them and even have them smell them raw.

Best to buy chicken with no hormones added and free range. 

Here are some of the reasons why we add spices to our cooking - 

Thyme - A member of the mint family it contains thymol-a potent antioxidant.

Cumin - Has antimicrobial properties and has been used to reduce flatulence.

Cinnamon - Best to buy CELYON cinnamon NOT cassia cinnamon. Unfortunately the most common cinnamon in the supper markets, is the cassia cinnamon. The cassia cinnamon is toxin to your liver.

- cinnamon has the highest antioxidant value of any spice. It reduces inflammation and lowers blood sugar and blood triglyceride levels. It provides manganese, iron and calcium.

Coriander - Lowers blood sugar and acts as an antioxidant.

Nutmeg - Anti-fungal, anti-depressant and great for your digestion. Good source of minerals like copper, potassium, calcium, manganese, iron, zinc and magnesium.

Black Pepper -  Relief from respiratory disorders, coughs, cold, constipation, indigestion, anaemia, diarrhoea, heart disease and has excellent source of manganese, vitamin K and is a good source of copper, iron, calcium and dietary fibre.

Spicy Chicken Delight Recipe

6 chicken legs

2 large garlic cloves

3 tsp fresh thyme leaves

1 tbsp coriander seeds

1 tsp nutmeg

1 tsp cumin

1 tsp cinnamon

1 tsp mixed spice

1 tsp Himalayan salt 

2 tsp ginger

1 tsp black peppercorns

3 tbsp rice malt syrup or honey

3 tbsp olive oil

Method

1 - In a mortar and pestle, grind the salt, thyme and garlic into a paste.

2 - In a fry pan warm your spices all together on a low temperature,

3 - Add your warmed spices to the garlic paste and grind until smooth.

4 - Add your malt syrup and oil.

5 - Massage your mixture into your chicken, cover with plastic wrap and place in the fridge for 2 hours or more. The night before is also fine.

6 - Place in a roasting dish and roast at 200 c for about 1 hour or until cooked.

Serve with polenta, potato, couscous or rice.

Heat up the spices

Grind the salt, garlic and thyme.

Add the warm spices to the garlic paste

Add your malt syrup and oil.

Cover your chicken with the spice mix and then cover and place in your fridge for a few hours.

Bake in the oven until cooked.

I served this with a baked potato and roasted broccoli and cauliflower.

Now that Winter is here, I have bought some new herbs, and growing them in my kitchen. I have also planted a few in my green house, which are growing  well.
