When a ''leg of lamb'' is on special, many families would then have a roast that week.When I was young, Monday was always roast night, and it was nearly always Lamb. There is something about sitting around your dinning table with friends and family and enjoying a good roast.
My choice of cooking large pieces of meat is, long and slow and using a crock pot or a large oven dish with a lid is the best way to cook this recipe.
This is a simple way to cook lamb. No added unnatural flavours.
Slow Cooked leg of Lamb - GF
Leg of lamb - cut to fit in a crock pot or cook covered in the oven.
2 large onions - sliced
bunch fresh thyme
1 cup red wine - bring up to the boil and simmer until reduced to half.
2 tbsp balsamic vinegar
Method
Oven - 160c or crock pot on high for 1 hour and then low for about 8 hours
1 - Lay the onion's on the base and then the thyme.
2 - Lay your lamb on top.
3 - Pour your reduced wine and balsamic vinegar, over and cook long and slow. I cooked my lamb in the crock pot on high for an hour and turned down to low for about 7 - 8 hours or until it starts to fall off the bone.
Lay your onions and herbs down first.
I asked Glenn to slice the end off, just so it would fit in the crockpot.
You don't need to add stock when you brown your meat. This is all about flavour. I love my large grill, it is removable.
This will taste as good as it looks.
Bring your wine to the boil and then simmer until it is reduced to half. You are cooking off the alcohol.
Pour over the reduced red wine and start cooking your lamb, covered.
Pour the liquid and onions into a pot, cool if you can to remove fat. Bring up to a boil and simmer until it is reduce to half the amount. Stir in your mixed rice flour, just to slightly thicken. Taste and season. Serve with your lamb.
With the leftover lamb I made Croquettes. I remember my mum making these with leftover roast lamb or beef. Crunchy on the outside and soft in the middle, served with mustard.
