When I am having a few around for dinner I love to cook a cake for dessert. It is so much easier and not being overly sweet, this cake finishes off a lovely meal with friends.
This recipe makes two cakes - You can halve this recipe to make one. I freeze one cake, sliced, for another day if I don't need it straight away. I usually make more than I need, because as I say, ''My freezer is my favourite appliance in my Kitchen (ok, maybe my oven)'' It is full of real, unprocessed food that has been processed in my kitchen.
Orange and Almond Cake - GF Recipe
Makes two cakes - 23 cm tins, line the base and grease the sides.
Option - serve with unsweetened yogurt.
4 whole oranges - placed in a large pot, covered with water and simmer for 1 hour. Drain and then cool.
1 orange - for garnish
12 eggs - separated ( always separated over a small bowl first, so no egg yolk goes into the whites.
1/2 cup brown rice malt syrup - plus extra for your garnish
450 gr ground almonds
Method
1 - Once your oranges have cooled, cut them up and place in a food processor or blender. Blend until smooth.
2 - Beat your egg whites until stiff.
3 - In a large bowl mix your egg yolks with the malt syrup.
4 - Mix your ground almonds and egg yolk mixture together.
5 - Fold a small amount of your beaten egg white first into your almond mixture, then fold in the rest. Be gentle so you have the volume, from the beaten egg whites.
6 - Pour mixture into both tins and bake for 45 minutes, or until a skewer comes out clean.
Cool for 5 minutes in the tins and then place on a rack to cook.
7 - Garnish - slice an orange thinly. Place in a pan with 2 tbsp malt syrup and cook until the syrup thickens, don't burn. Remove and place them on your cake when you are ready to serve.
Simmer your oranges in water, covered for one hour.
Cool and slice.
Blend.
Have all your ingredients ready.
Beat your egg yolks and malt syrup together.
Beat your egg whites in a clean bowl
- until they form a peak.
Mix into the ground almonds, the egg yolk mixture.
Fold a small amount of egg white to start with, and then add the rest. Be very gentle.
Pour into two tins.
Bake for 45 minutes or until a skewer comes out clean.
In a pan, cook some orange slices and malt syrup util it becomes stick.
Place garnish on top of the cakes.

Slice and enjoy, I serve each slice with plain unsweetened yogurt.
