Simple and Delicious Fish Chowder - GF

Dairy and Gluten free.

Remember those cob bread loaves you used to be able to buy, maybe you still can. I remember going out for lunch in Auckland City and I ordered Fish Chowder. It came in a 1/2 cob loaf, that had, had the inside scooped out, leaving just the crust. It was then filled with fish Chowder. It looked and tasted amazing. As you drank the chowder, you could rip off bits of bread and dip it in. Such a great idea.

Simple and Delicious Fish Chowder Recipe - GF

serves 5 - 6

1 kg firm white fish - cut into cubes

1 onion - chopped finely

2 cups celery - diced

2 cups sweet potatoes - diced

2 cups carrots - diced

2  cups fish stock or 1 cup water and 1 cup stock 

1 cup coconut milk (if you only have coconut cream, half it with water)

Himalayan salt and pepper

2 tbsp cornflour / 1 tbsp water mixed

Bunch of fresh herbs - chopped finely - lemon balm, chives, parsley, fennel.

Method

1 - Saute onion in oil.

2 - Add the celery, carrot and sweet potatoes. Cook on medium with the lid on for 5 minutes.

3 - Add the stock and bring up to a simmer until the vegetables are cooked, with the lid on.

4 - Taste and season and then add your fish, cook for 5 minutes or until your fish is just cooked.

5 - Add and bring your coconut milk up to a near boil but do not boil. Turn off. 

6 - Stir in your herbs and serve.

 

I just picked a few different herbs from my garden.

Cook your onions until soft, with the lid and temperature low.

Add your vegetables. Place the lid on and cook for about 5 minutes.

Add your stock and cook with the lid on until the vegetables are cooked.

Add your fish and cook for about 5 minutes.

Season and then stir in your coconut milk and heat to a near boil. Turn off.

Add your herbs and serve.
