Have you ever made soft cheese before ?
It is so easy. I often have a bowl of soft cheese flavoured with fresh herbs and sometimes garlic mixed in. I love to spread it on crackers or homemade bread.
Remember the nursery rhyme -
''Little Miss Muffet sat on her tuffet eating her curds and whey''
Well this what this recipe is. Curds and Whey.
Place a strainer in a bowl, make sure there is a gap underneath for the whey to drip into.
Lay a cheese cloth in the stainer.
Pour in any amount of thick yogurt.
Cover with the cloth.
Place a small plate onto.
Sit a heavy tin or pot on top and then into the fridge for 24 hours.
The weight releases the whey from the yogurt.
Leaving the curd, which is now your soft cheese. Add fresh chopped herbs and if you like, raw chopped garlic.
Roast tomatoes by scattering raw garlic on top and then dribble olive oil on top. Oven 150 c and roast until soft.
Keep cheese covered in the fridge for up to 2 weeks. Spread cheese over crackers and bread.
