Who does not love Winter and crockpot meals. Throwing all your ingredients into a crockpot and then going out for the day, come home, and it smells like MAMA'S been in the kitchen all day.
I will be sharing a lot of recipes for the crock pot. Time to stop working so hard in the kitchen. If you don't have a crockpot, just go and buy one. I usually cook on low for the longer period of time, just in case I get caught up in town for longer.
Freezer - A large freezer should be one of your best friends in Winter. When you are having a ''feel like staying in the kitchen day'' Prepare a whole lot of RAW crockpot meals and place them in freezer bags and freeze. The night before you just, take out a RAW meal and thaw overnight and then tip it into the crockpot and turn it on.

Slow Cooked Chicken and Coconut Curry Recipe
Serve with brown rice.
1 whole chicken - size depends on your family - Cut up into pieces - see photo's below.
2 large sweet potatoes - kumara - chopped into cubes
1 onion - chopped
3 cup chicken stock
4 tbsp curry powder
2 tsp cumin powder
400 gr tin coconut cream - to be added at the end
2 tbsp cornflour / 2 tbsp water mixed - to be added at the end
Himalayan salt / pepper
Option -
Instead of curry powder use Red Thai curry paste - My recipe for this is under '' Sauces"
Fresh herbs - for garnish
Broccoli - cut up florets and place them in near the end to cook.
Cashew nuts - sprinkle over and mix just before serving.
Method
For freezing - place all the ingredients, except the coconut cream and cornflour mix, in a large freezer bag. Freeze until you need it. Thaw the night before and place into your crock pot on low all day.
1 - In your crock pot or a large pot, place all your ingredients, except the coconut cream and cornflour mix.
Crock pot - Cook on high for about 4 hours or on low for 6 hours.
2 - 20 minutes before it is ready, add your mixed cornflour and coconut cream, heat through and turn off. Don't bring to the boil while the coconut cream is in it.
Taste and then season.

Place all your ingredients in your crock pot.
Turn on and cook during the day.
Add your cornflour mix and coconut cream and bring it up to boil, but don't boil.
How to cut up a whole chicken.
Cut whole legs off at the join.
Cut off the wings and down the back bone- place into a stock bag for the freezer.
Cut the carcass in half. You will have two chicken breasts and cut them in half for this recipe and remove the bone .
Cut the large chicken leg in to giving your two drums sticks and two thighs.
Place any bones into a bag, label as ''chicken soup bones'' and place in the freezer.
Enjoy your curry with vegetables and polenta, couscous or rice.
