A sweet treat -
I am having about 20 young people over for dinner so I decided to stuff apples. It is apple season and it is always best to buy in season.
May sure, if you going to make this, that you have an apple corer.
Some of you remember your mum make this when you were a kid. It has been around for years, but usually with dates. I also have another recipe with a crumble on top of the stuffed apple under ''Sweets''
These apples took along time to cook because they were new season apples and very firm.
Baked Apple with Prune and Orange Recipe
Oven 200 c
Apples - cooking apples work best
Prunes - for 20 apples I used 3 bags that were 250 grms each.
large orange - rind and juice
Sliced almonds to put on near the end, for a bit of crunch.
Method
1 - Chop your prunes and mix in the orange juice and rind.
2 - Core your apples.
3 - Stuff the apples with the prune mix.
4 - Sit them on an oven tray and cover with tin foil.
Cook until just tender, about 1 hour or more. If you cook them for too long the apple will collapse.
Take the tray out and sprinkle some almonds on top and place them back in just to brown.
Serve with plain unsweetened yogurt.
Chop your prunes
Grate orange rind and juice one of them.
Mix the orange through the prunes.
Cord your apples.
Stuff the apples.
Bake in the oven covered with tin foil until soft, but don't fall apart.
Serve with natural yogurt.
