If you need a fun meal to share with family and friends this is the one. All the dishes are on the table and you all just need to make your own. No stress, easy meal, and did I say healthy, well of course it is :)
I love my recipe for the wraps. I have used it a lot on realfoodnow.nz. In summer I would keep the mixture for two days in the fridge and fry them up fresh. You can freeze them but it is not quite the same.
Vietnamese Pancakes
Make a batch of Tortillas - Gluten free.
Tortilla Recipe -
gluten free, SOFT, TUFF and delicious - makes ABOUT 6
1 1 /2 cups Tapioca flour or you could use Tapioca / corn flour (maize). I found just using the corn flour was not as nice.
6 tbsp coconut flour
3 eggs - beaten
1/2 tsp sea salt
2 1/2 cups or either coconut milk, coconut cream and water, cows milk or almond milk (unsweetened).
Coconut oil for frying
Method
1 - Mix dry ingredients together.
2 - Mix wet ingredients together.
3 - Now pour in the wet ingredients, into the dry and whisk well. This mixture is runny but will work well.
4 - In a heavy base fry pan, on high, melt coconut oil, and pour a ladle of mixture into the pan. Tilting the fry pan, so the mixture spreads in a round circle (just like a pancake or crepe )
5 - Once bubbles appear, flip over. Cook until coloured.
Filling -
Prepare enough for your family and place on a large plate -
Carrots - Julienned
Spring onions - sliced thinly
Bean sprouts
Cucumber sticks
Bunch fresh basil leaves, coriander leaves, mint leaves - I did not use coriander because it was not in my garden.
Option - long green chilli - sliced
Meat -
This is an option, I have used chicken but it could be just vegetables.
Sauce
4 tbsp lemon juice
2 tbsp brown rice malt syrup
2 tbsp rice winevinegar
2 tbsp tamari - gluten free soya sauce
2 tbsp sesame oil
2 tbsp fresh ginger - chopped finely
2 cloves garlic - smashed and chopped (make sure you buy garlic with the roots attached, then your know it is not from China)
Option - red chilli - sliced
Method
1 - Mix all the sauce ingredients together and place into a jug for serving.
Assembly
1 - Place all ingredients on the table and everyone can make their own. Fill one wrap with fresh ingredients and a small amount of sauce, roll up and dribble some more sauce over top if you like.
I have used chicken legs and cooked them in my little oven. I just pour some tamari sauce over them first and then roasted them.
Once cooked I took the meat of the bones.
I then placed the bones in a freezer bag and in to the freezer, until I have enough bones to make chicken stock.
Mix your dry and wet ingredients into bowls.
Pour the wet into the dry and whisk.
Heat your fry pan add a tsp oil and ladle in some mixture. Tilt your pan so the mixture spreads. Cook and then flip over.
Stack them ready for the table.
I love fresh corn, it is so sweet and raw is the best.
Just slice with a knife, it off the cob.
Chop your herbs
Place your raw ingredients on a plate.
Prepare and combine your sauce ingredients.
To make, place the raw vegetables, chicken and herbs on your wrap, pour a little sauce on top. Roll and enjoy.
