Sticky Date Pudding - gluten free/processed sugar free

Don't be scared by the word ''Gluten Free '' seriously, some of you need to give gluten a break once in a while. Buckwheat flour is one of my favourite flours. It is a great protein and very filling. Easy to buy in supermarkets.

Remember the last time you ordered Sticky Date Pudding in a restaurant. If you are were like me, you would have found it, sickly sweet. I would not even order it now if it was on the menu. It is loaded with sugar. If you have watched the ''Sugar Film'' you differently would not.

This dessert is honestly the most amazing ''sweet treat'' you could ever eat. I have served this with coconut yogurt that I make. 

Sticky Date Pudding  Recipe

Oven 180c - greased and lined loaf tin

Serves 6

1 cup dried dates - cut in half - this is to make sure there are no pips 

1 1/4 cups boiling water

1 cup buckwheat flour - gluten free - great protein.

1/4 cup rice malt syrup (process sugar free and fructose free )you can use honey but it is high in fructose.

1 tsp baking soda

1/2 tsp baking powder

2 eggs

1/4 cup coconut oil or butter

1 tsp vanilla essence

 

Method

1 - In a bowl cover the dates with boiling water for 5 minutes to soften and then cool it.

2 - In a food processor add dates/water, syrup, eggs, soda, baking powder and coconut oil. Blend until smooth then add the flour and blend until mixed.

3 - Pour into your prepared loaf tin and bake for about 50 minutes - stick a skewer in the middle and if it comes out clean it is ready.

Sauce - this can be doubled if you think you need more sauce.

3/4 cup rice malt syrup or honey

3 tsp vanilla essence

1 1/3 cup coconut cream

Method

1 -  Place all ingredients into a small pot and simmer for 5 minutes.

Serving

slice your date pudding and place a slice on a plate, pour some of your sauce on the side or underneath.

I like to also serve it with coconut yogurt.

Soak dried dates in boiling water for 5 minutes.

Place sauce ingredients in a medium size pot 

Simmer for 5 minutes be careful that it does not boil over.

In a food processor or blender, blend all your ingredients.

Blended

Pour into your prepared tin.

Ready for the oven.

Bake until a skewer comes out clean.

Cool slightly and slice then serve with your sauce

Tastes amazing with yogurt - I love coconut yogurt.
