Chocolate Brownie - Gluten Free and NO Processed Sugar.

I am a buckwheat fanatic. At the moment I eat a 1 large buckwheat pancake with blueberries every morning with a green smoothie. It just keeps me fuller for longer and I don't have to snack, before lunch. I am having a few over, for a pot luck dinner tonight and this is what I have made for a dessert. Glenn and I are process sugar free, we do eat a small amount of honey or brown rice malt syrup  sometimes, in baking, and a small amount of fruit in our smoothie each morning.

This brownie takes a few minutes to throw together and 20 minutes to cook. No one will ever know it is gluten free. You can't tell at all, I promise.

Buckwheat is a gluten-free flour, which is related to the rhubarb and sorrel. It is rich in protein and dietary fibre.  One serving of 100 gr gives your 13.30 gr of protein. They are as you can imagine, very filling

Chocolate Brownie- gluten free and no processed sugar Recipe

1 cup buckwheat flour - from your local super market

1/2 tsp baking powder

1/2 tsp Himalayan salt

1/2 cup nuts or 85% chocolate chopped  -  I used cashew nuts or freeze dried berries.

3/4 cup honey or brown rice malt syrup (comes from brown rice) - If you are adding chocolate to this recipe add less sweetener. ( 1/2 cup instead )

1 1/2 cups cacao or cocoa - I use cacao, it is more bitter but better for you.

1 tsp vanilla extract

4 eggs

220 gr unsalted butter

Method

1 -  In a small pot, melt butter and honey, add cacao. Mix. Cool slightly.

2 - In a small bowl, mix eggs and vanilla.

3 - In a medium bowl mix flour, baking powder, salt and nuts or chocolate.

4 - Into the flour mixture, mix in the egg mixture and then the butter mixture.

5 - Pour into a lined 8 inch by 8 inch tray and bake at 180c for about 20 minutes.

Slice and eat or you could dribble chocolate over, but I am looking for as little sweetener as possible.

Melt your butter and honey then add the cacao.

Mix dry ingredients and nuts together. Mix eggs.

Add every thing together.

Yummy even raw.

Don't you love my little oven. I can't tell you how many times I have used this instead of my large oven. Takes no time to heat up. Even when you were a family of 5 I used it.

Looking amazing, don't you think. You could like I said, dribble over some dark chocolate.
