We all know that gelatin in bone broth is great for your bones.
Grass fed beef gelatin is a rich source of collagen.
Collagen is, an abundant, protein in the body. It provides the infrastructure of the musculoskeletal system, the intestinal lining, the skin and is essential for optimal function and mobility.
In other words - Collagen holds your body together.
So that is why Marshmallow, homemade is a great snack. Bought marshmallows are loaded with corn syrup (GMO), food colouring and processed sugar.
Try this with your kids and build strong bones.
You won't ever want to buy Marshmallow again after trying this. The flavour changes with the flavour of your honey. I used a multi-flora with manuka honey.
Honey Sweetened Marshmallow Recipe
- Dish - 6 '' by 8 '' lined with grease proof paper
- Metal bowl with a beater
1/2 cup cold water mixed with 3 tbsp gelatine, in a large metal mixing bowl and leave.
1/2 cup water, 1/2 cup honey, 1/4 tsp salt and 1 tbsp vanilla extract in a medium size pot.
Option for Coating -
1 cup coconut - toasted gently in a fry pan, until golden brown - stirring
or
Arrowroot powder
Method
1 - Sprinkle some arrowroot or coconut on the base of your dish.
2 - Bring your water, honey, salt and vanilla to the boil, and boil for about 6 minutes or until it comes to a ''soft ball'' stage ( drop a bit into cold water, and it should form a soft ball if it is hard you have gone to far) or the best way is, to use a candy thermometer and boil it until it reaches 240 degrees.
3 - Slowly pour the very hot honey mixture into your gelatin, as you beat it. Keep beating for about 6 minutes or until it is thick and glossy. If you over-beat it, it will become difficult to spread and start to set.
4 - Quickly pour and spread in your dish, sprinkle over extra coconut or arrowroot, press lightly.
Rest on the bench for about 1 - 2 hours, before cutting and dusting the sides with your coating.
Cut small ones for hot chocolate and larger ones for just eating.
You can freeze these.

Pour your water and gelatin in a bowl and mix. Break up just before you pour your honey mixture in.
Boil to a soft ball your honey, water, vanilla and salt. 240 degrees
Slowly pour your honey mixture into your gelatin, beat until thick and glossy. Don't over beat.
Pour quickly into your dish, sprinkle over your coating and wait up to 2 hours. Cut and coat.
I made toasted coconut for snacking and plain, coated with arrowroot for hot chocolates.
If you are toasting them on a fire, have a plate close by.

The marshmallow's below have had some dried raspberries added to the mixture, giving it a slight pink colour for a friends birthday.
