Beef Patties, Fresh Pasta and Sage Butter Sauce.

Fresh pasta is amazing to eat. You just can not compare fresh to dried. You do not need a pasta machine, you can use a rolling pin. Although a good pasta machine is a great asset. ( there are a few terrible pasta machines out there, so don't get caught, into buying one of those) My pasta machine brand is called ''Imperia''

Beef Patties, Fresh Pasta and Sage Butter Sauce Recipe

Makes 5 large patties

800 gr beef mince

1 1/2 cups organic rolled oats - rolled oats are heavily sprayed with chemicals

1 tbsp dried oregano

1 tbsp dried basil

2 tsp Himalayan salt / black pepper

3 tbsp tomato paste

1 onion finely chopped

4 large cloves garlic

Method

1 - Mix all together and divided into 5 large patties or 10 small ones.

2 - Fry gently in a small amount of coconut oil, on both sides, until slightly  pink, not raw

in the middle or bake in an oven for about 50 minutes or until middle temperature reaches 72 celsius.

Sage Butter Sauce Recipe

You may need more or less, enough to coat and flavour the pasta.

200 gr salted butter 

Handful fresh sage - chopped finely

Fresh Pasta Recipe

Serves 5 - 6 

3 cups strong flour

pinch salt

3 egg

3 egg yolks

3 tbsp olive oil

3 - 6 tbsp water - this depends on what size your eggs are. I used size 8 with only 3 tbsp water.

Method

1 - Option 1 - place all ingredients (starting with 1 tbsp water) in a food processor and blend until it

forms a ball. You don't want it sticky or dry. Cover in plastic and place in the fridge to rest for 20 minutes.

  - Option 2 - Place the flour on a clean bench, make a hole in the middle and drop in all the other

ingredients ( starting with 1 tbsp water) Mix with two fingers, bring in the flour, then knead for about 10 minutes, adding extra water if needed.

2 - Roll out your pasta thinly ( star with the largest stetting and then go down to the smallest setting) using a pasta machine or rolling pin. Cut lengths, once rolled into 2 cm wide ribbons. Dust with flour so them don't stick together. 

3 - Drop into salted, boiling water for about 1 - 2 minutes or until just tender. Drain and rinse.

4 - Drop your pasta into your sage butter sauce, coat well and place a portion on each plate.

5 - Sit your patty onto of the pasta.

Serve with a green salad.

Mix all the patty ingredients together, divide them into balls and then flatten them.

Coat them with flour and bake or fry. I baked mine, less fuss and not pan to wash.

Pasta -

Place all the pasta ingredients into a food processor and blend until it forms a ball. Rest and then roll.

Roll out your pasta thinly. Fold in half, sprinkle with flour, so it does not stick. Using a large knife and cut lengths. Open them up and flour them. Your bench will get pretty messy.

Cook just before serving.

Drop into boiling salted water, cook and drain. Then run warm water over it to remove any starch.

Melt butter and add sliced sage leaves. Drop your pasta into this butter and toss. Serve straight away.
