If you look at all the ingredients in bought mayonnaise, you find bad oils, preservatives and colours. You may find one that is close to being eatable, but you can't beat homemade. Cashew nut's are my new favourite.
Flavour - this mayo can be flavoured with so may different natural ingredients -herbs, mustard, curry powder, turmeric, pickles, capers, chopped boiled eggs.

Sauce for a lasagne - I have also used this mayonnaise for my chicken lasagne. I thin it done with kefir milk (probiotic milk). See photo's below.
Creamy Vegan Mayonnaise Recipe
Keep in the fridge covered for up to 2 weeks.
2 cups cashew nuts - soak in water over night or at least 4 hours
2 tbsp lemon juice
2 tbsp apple cider vinegar
1 large clove garlic - smashed and chopped finely or you could use garlic salt
Fresh herbs chopped finely - parsley, chives, dill
Season - white pepper and Himalayan salt - add after blending
Water
Options for flavour - mustard, curry powder, turmeric, pickles, capers, chopped boiled eggs.
Method
1 - Drain your nuts and place everything in a blender and blend until smooth and creamy, adding water, slowly until it is the right consistency.
Taste and season.
Soak your nuts, this makes them soft, so they will blend to a creamy mixture.
Blend until smooth.
A meal in one bowl.
This is a salad made with - cooked potatoes, sweet potatoes, carrots, broccoli, gherkins, cooked chicken, roasted red capsicums, herbs, spring onions, asparagus and lettuces.
Using this sauce and a homemade pasta sauce in a chicken lasagne.
