Indonesian - Serundeng

Serundeng - is a crispy spiced coconut with peanuts. You served this with rice or as a condiment at a barbecue, with satay sauce. It tastes sweet and salty. Eating serundeng brings back memories of my childhood. Our family had a lovely friend called Dee, she was from Indonesian and she was an amazing cook. I loved her Serundeng it reminds me of Summer.

Indonesian - Serundeng Recipe

500 gr dried coconut

1/2 cup coconut sugar

3 tsp Himalayan salt

1 tsp dried coriander

1 tsp cumin

1 tsp grated fresh ginger

1/2 onion grated

3 large cloves garlic - minced

2 cups roasted salted peanuts

Method

1 - Mix all the above ingredients except the peanuts in a bowl.

2 - Place on a baking tray and bake in an oven 180c, stirring regularly until golden brown or fry in a heavy base fry pan, stirring, until golden brown.

Cool and keep in an airtight jar.

Serve with fried or plain rice or as a condiment at a barbecue, served with a satay sauce.
