Meat free meal - Most of us love a good lasagne, but making all the sauces can really be time consuming. This recipe takes no time at all, just make sure all your vegetables are pre-cooked and seasoned. If you eat this blind- folded, you would think you were eating pasta, not tortilla's. Easy for kids to create. You can also add cooked meat and plenty of herbs.

Oven 180 c - Line the base, grease the sides, of a round spring form tin, to fit your tortilla's
Vegetable options -
Slice and roast pumpkin, kumara (sweet potato),
Slice and saute' courgettes( with garlic), egg plant, mushrooms ( with fresh thyme)
Slice and blanched spinach or chard (silverbeet) - drop into boiling water, remove after 30 seconds, drain, run cold water over it to stop cooking and then squeeze out liquid.
Sauce
Tomato paste / tomato puree - ( add fresh chopped herbs) or tomato pasta sauce
Extra's
Refried beans - soak dried brown beans over night, simmer in water until soft and drain. (or buy tined beans, this is more expensive)
- 400 gr cooked brown beans ( pinto beans)
- 1 3/4 cup stock - vegetable or beef stock
- 1 tsp ground cumin
Place a the ingredients into a pot, simmer and mash beans as they cook, until thick. Taste and season. ( use on toast or wraps, can be frozen in small amounts for lunches)
Tortilla's x 5 and grated cheese.
They need to fit your tin and they can be gluten free or plain.
The cheese is for the top.
Layering - make sure all ingredients have been tasted and seasoned.
Press gently, each tortilla as you lay them.
1 - Lay down a tortilla first.
2 - Spread your tomato sauce and top with refried beans.
3 - Lay a tortilla and spread your tomato sauce and top with roasted slice kumara.
4 - Lay a tortilla on top and spread your tomato sauce and top with your greens.
5 - Lay another tortilla and spread again with tomato sauce, top with mushrooms.
Finish with another tortilla, tomato sauce and grated cheese.
Cover with grease proof paper ( stops cheese sticking to the foil) and then tin foil.
Bake for 20 minutes and then remove the cover and and bake for another 10 minutes or more.
Rest for 15 minutes before slicing.
Tortilla's and sauce go in between each layer.
How beautiful is this, refried beans are so full of nutrition including protein and iron. There is no harm in eating a meatless meal.
