Irish Beef Stew

Two days ago we woke up to a very good dump of snow. It is October and Summer is on its way, so this way a shock. Times like this I just want to eat a good hearty how stew. So here it is.

Irish Beef Stew Recipe

1 kg stewing steak - I used gravy beef and left it whole

Enough vegetables for your family -

carrots - sliced

parsnip - sliced

sweet potato or plain potatoes - cubed

1 onion - sliced

bunch of fresh thyme

2 tbsp tomato paste

4 cloves garlic - chopped

2 cups beef stock or more - enough to cover your meat

1 cup dark beer

Option as an extra - 1 cup rich red wine

2 tbsp cornflour mixed with water for thickening

Method

1 - Brown the meat in your heavy base pot.

2 - Add the garlic and cook for 30 seconds.

3 - Add the beer and wine and tomato paste, bring to a boil.

4 - Pour in the stock and thyme. Bring to a boil, reduce heat and simmer with the lid on for 1 -2 hours, or until the

meat is tender.

5 - Add your vegetables - onion, carrots, potatoes and parsnip. Simmer with the lid on until tender.

6 - Add the cornflour mix and season. Taste

Serve in large bowls.

This is gravy beef, I did not cut it up, it falls apart while cooking, and this makes it easy to brown.

Ready to be served.

It is Spring and here is my vegetable garden covered with snow. The good thing is, all my small plants survived.
