Japanesse Vegetable Pancake - Okonamiyaki - GF

My first memory of eating these fritters was in Japan. It is a savoury pancake. The are honestly delicious and very easy to make.

They usually have shrimp added and are served with a special sauce that you buy and has preservatives added to it, so I have made up an easy sauce, that tastes great.

Once making these you probably wont even need to use a recipe, its that easy. They are so quick and I serve them with a green salad.

Japanesse Vegetable Pancake - Okonamiyaki Recipe

1/2 cup wholemeal flour or gluten free flour

2 tbsp cornflour

1 tsp baking powder

1 tsp sea salt

3 cups shredded cabbage

1 finely chopped spring onion or a small white onion grated

2 grated carrots

3 eggs - whisked with a fork

coconut oil for frying

Method

1 - Mix the vegetables in a large bowl.

2 - Mix the dry ingredients in another bowl. 

3 - Mix the above ingredients all together and then stir in the eggs.

4 - In a heavy base fry pan, on medium, melt coconut oil and with a large spoon drop in the mixture forming 4 fritters to start with.

Cook for about 3 minutes or until crispy and then flip over and cook another few minutes.

Sauce

1/2 cup mayonnaise and 2 tbsp tamari soya sauce ( naturally fermented soya sauce) mix together.

Serve on a platter with a side green salad.

Mix in a bowl your vegetables.

Mix in another bowl your dry ingredients.

Now mix altogether.

Using a fork, mix your eggs.

Mix in the eggs.

Melt coconut oil and drop spoonfuls in a fry pan, cook for a few minutes and then turn over.

Cook for a further few minutes, until the egg has cooked.

Serve with your mayo sauce.
