Beef Salad and Chimichurri Dressing - GF

If you are a busy family - here is a recipe for an '' all and one Summer meal''

Your steak can be fried or cooked on the barbecue.

You can also serve this with boiled new potatoes.

Chimichurri Dressing is originally from Nicaragua, Central America. Served with barbecued meat.

Nutrition in Parsley - this is a blood purifier, Vitamin A,B,C, iron, calcium, phosphorus, magnesium, potassium, iodine, maganese.

Beef Salad and Chimichurri Dressing Recipe

Serves 4

Chimichurri Dressing

Best made the day before for flavour, but not important. 

1 large tomato, seeds removed and slice into very small cube

2 cups chopped parsley (sometimes I add other fresh herbs as well from my garden)
60 mls apple cider vinegar
1 clove garlic finely chopped
1 spring onion finely sliced
1 tsp brown rice malt syrup - fructose free sweetener
1/4 tsp Himalayan salt and black pepper
1/2 cup extra virgin olive oil or more
1 tsp dried oregano
1/4 tsp dried chilli powder
1/4 tsp ground cumin


Method

1 - Blend in a blender all the ingredients (start with 1/2 cup oil first and add more if it needs it) .

Steak

Oil and season your steak, cook to medium rare and then rest for 5 minutes, next slice across the grain.

Salad

Enough salad ingredients for 4 people, below is for options only -

Baby spinach, rocket, basil leaves
Lettuce
Parsley
Baby green beans , steamed for a few minutes and the dropped in ice water
Bokchoy, cut through the stem and quickly stir fried in coconut oil
Cucumber / raw courgettes sliced
Red capsicum, roasted is best

1 - Mix all the vegetables together and place on a large bowel, drizzle olive oil through and season with sea salt and pepper. 

2 - Place hand full of salad on each plate.
3 - Lay the slices of steak over the top and then drizzle the dressing over top.

Have all your ingredients ready.

Place all, except the tomatoes into your blender, blend, adding more oil if you need.

Looking good.

 

Quick fry

Salad on a large platter or you can place salad on indicidual plates.

Lay the sliced steak on top and then pour the dressing over top.

Easy full meal served with new organic potatoes.
