This delicious lemon flavoured loaf has a really fresh lemon flavour. No guilt eating this loaf. No fructose or processed sugar.
Makes 1 loaf
Lemon Loaf Recipe
3 lemons sliced
1/2 cup brown rice malt syrup, (fructose free sweetener)
2 cups ground almonds
1 tsp baking powder
1/2 tsp salt
1/2 cup coconut oil
2 eggs
Method
Oven 170 c - line a loaf tin with grease proof paper
1 - Place the lemon slices in a small pot and cover with water. Simmer for 15 minutes or until soft. Drain off water well and cool.
2 - Place lemon in a food processor and pulse until smooth.
3 - Add to the lemon the rest of the ingredients and pulse to combine.
4 - Pour into the lined tin and bake until a skewer comes out clean, about 60 minutes
Cool in the tin for 10 minutes and the remove.
Simmer your lemon in water for 15 minutes, drain well and cool.
Blend in your blender.
Add all the other ingredients to the lemon and blend.
Pour into your prepared loaf tin.
Enjoy and share with your friends. This loaf can be frozen in slices.
