I love a bit of spice in my food. Using chorizo sausage from ''Neat Meat'' at the Landing in Frankton, they use natural flavouring, and gave this frittata a delicious flavour.
Also adding chickpea's, spinach, onion, garlic, smoked paprika and eggs for extra nutrition.
Nutrition in Chickpea's - Gluten free and a high source of protein, fibre, Iron, vitamin B6 and Magnesium.
The cheapest way to buy chickpeas is dried.
1 - Soak dried chickpeas overnight in a large bowl of water. ( make sure the water level is way above them as the will soak up a lot of water )
2 - Drain off water, place into a large pot and cover with fresh water. Simmer for about 50 mins or until tender. Drain and cool.
3 - Measure out what you need and place the rest of the chickpeas into freezer bags for next time.
You can buy cooked chickpeas in tins but it is more expensive.
Lay flat in the freezer until frozen, then they won't stick together.
Chickpea Frittata Recipe
You can prepare half of this recipe earlier and just before serving, add the eggs and cook.
2 cups cooked chickpea's
2 hand full's of sliced spinach
1 tsp smoked paprika
6 eggs - beaten
1 onion - chopped finely
3 garlic cloves - chopped finely
coconut oil
Method
1 - In a heavy base fry pan, gently fry onion and garlic until soft.
2 - Add chorizo, paprika and chickpea's and cook on low until there is plenty of oil released from the chorizo.
3 - Add spinach and cook on low, until wilted.
4 - You can stop cooking now and just before serving add the egg mixture. -
Grill 200c
Pour the egg mixture into the fry pan and stir to mix through. Cook for a few minutes, when the edges are set place under the grill to cook the top for a few minutes, don't over-cook the egg.
