Curried Tuna Spread - GF

A lovely friend of Glenn's and mine from America gave me this recipe. They came to Queenstown every year for about 20 years for a holiday. She loved to cook and use to cook up some amazing dishes, but she also loved to make a picnic for her husband and Glenn and I. We would then all go off fishing to catch trout or salmon.This recipe is one that was often in our sandwiches. We loved it.

I have added Turmeric for extra nutrition.

Nutrition in Tuna - High in selenium, Vitamin B3, B12, B6, Vitamin D, Protein, Phosphorus and more.

- High in Omega- 3 fatty acid and has anti-inflammatory and antioxidant benefits.

Nutrition in Turmeric - manganese, iron and B6

- Potent but safe anti-inflammatory,  

- effective treatment for inflammatory bowel disease, such as Crohn's and ulcerative colitis.

- Gives relief to Rheumatoid arthritis.

- Studies have linked the frequent use of turmeric to lower rates of breast, prostate, lung and colon cancer.

Curried Tuna Spread Recipe

Use to spread on bread or as a side salad.

1 425gr can of Tuna in spring water - drained

2/3 cup mayonnaise - I made mine - but if you are buying it, remember to check the ingredients

2 tsp curry powder

2 tsp turmeric powder

1 green apple - cut finely and into cubes - place in a bowl with 1/2 tsp sea salt and warm water, leave for 3 minutes then drain. The apple cubes will now not go brown for a couple of days - or more.

1 lemon - cut into quarter's

Himalayan salt / pepper

Method

1 - Mix altogether and taste and season.You can squeeze some lemon juice into the tuna mix for taste. It needs to have a hint of curry and be able to be spreadable.

 

I mixed the curry powders into the mayonnaise  and the apple into the tuna first.
