Like most of you, I have had a lot of fruit crumbles in my life, but this recipe is my favourite. You don't have to be gluten intolerant to eat this.
Crunchy Fruit Crumble - Gluten Free - Recipe
Serves 6
325 gr gluten free cornflakes
125 gr coconut
250 gr sunflower seeds
250 gr pumpkin seeds
Option - dried apples, apricots etc
1/2 cup coconut oil
1/2 cup malt brown rice syrup, maple syrup or honey
2 egg whites - this is what makes the crumble clump together.
Fruit - I used frozen blueberries, raspberries and green apples - (these apples, I had chopped into small cubes and pre-cooked.)
Method
Oven 180c
1 - Mix all the dry ingredients together.
2 - Melt in a pot the syrup and coconut oil
3 - Mix all together and the then add the egg white.
4 - Lay out on a large tray and bake until golden then cool.
5 - Place your fruit in an oven dish with sides. Just before serving add the crumble on top and place in the oven to heat through.
I doubled this recipe for my guests. The egg white makes it chunky.
