I felt like a kid today, as I rolled out dough, it reminded me of my girls playing with play dough, many years ago.
I made a 3 batches or Tortilla dough - Masa Harina Flour - This flour is easy to buy in the supermarket. It is GLUTEN FREE - is made from dried corn that has been hulled, the tough outer skin of the corn kernel has been removed and ground up.
1 - I left plain, rolled out, cut into circles, brush olive oil on top and sprinkled sea salt on top and baked.
2 - I mixed smoked paprika in the dough, rolled out, cut into circles, brushed olive oil on top and sprinkled more paprika on top.
3 - I mixed turmeric in the dough and did the same as above but sprinkled more turmeric on top.
You know when you open a bag of corn chips and you just can't stop eating them. It is usually because of the flavouring and often it has MSG in it, which is addictive and really bad for your healthy. They also often have been deep fried in really bad oils and have food colouring and additives.
This is a great school holiday recipe for your kids. They could make up all sorts of flavouring as long as its all natural.
The key is to roll them thin or best option is using a tortilla press and don't over cook them.
Baked Tortilla Chips Recipe
make this recipe 3 times, flavouring them each differently.
Option 1
1 cup masa harina's flour
1/2 cup water - and maybe a little more
1 tbsp olive oil
2 tsp turmeric
Option 2
1 cup masa harina's flour
1/2 cup water - and maybe a little more
1 tbsp olive oil
2 tsp smoked paprika
Option 3
1 cup masa harina's flour
1/2 cup water - and maybe a little more
1 tbsp olive oil
You will also need -
Olive oil for brushing
sea salt for sprinkling on after.
Option sprinkle dried chilli on top just before cooking.
Method
1 - Mix flour, water, spice and oil together to form a ball that is not sticky or dry. Cover and leave for 10 minutes.
2 - Roll out and cut circles to the size you like. Brush with oil and dust spice on top. The plain ones just brush with oil and sprinkle sea salt on top.
Bake175 c for about 15 minutes or until slightly crisp but not to hard. It will depend on your oven.
Need in your flavour and then rest.
Roll out really this or use a tortilla press and cut into circles, Brush with oil, season then lay on a tray and bake.
These chips would be nice served with refried beans, cheese, avocado and sour cream. Above with a spicy mince and vegetable dish with cheese and sour cream.
