Quick and Easy Macaroni Cheese - GF

This recipe is a one pot dish. You don't need to make a white sauce or cook the macaroni first.

Once the onion has been chopped this dish takes less than 10 minutes to make. 

Quick and Easy Macaroni and Cheese Recipe

375 gr Raw Macaroni - Plain (quick cook)  or Gluten free 

1 onion - chopped small 

5 - 6 cups any type of milk - cows, rice, coconut or almond milk

3 large tsp whole grain mustard

1 cup grated tasty cheese

2 tbsp coconut oil 

Option of vegetables - spinach, broccoli, corn, mushrooms or any other vegetables of your choice

Parsley - chopped for garnish

Method

1 - In a large heavy base pot melt your oil and add your onion, cook on low with the lid on until the onion is soft.

2 - Add mustard then the raw macaroni.

3 - Add 5 cups milk and cook on medium stirring regularly so it does not stick, adding the other cup as needed.

4 - When the macaroni is firm to the bite add your vegetables if you are adding spinach I always add it once this dish is cooked and then just stir them in.

5 - Taste -  season and add the grated cheese.

Garnish with parsley

Melt your oil and add cook the onions. When soft add mustard and raw macaroni.

Add milk and cook on low stirring every now and then. When nearly cooked add vegetables, cook and then cheese.
