This is a very quick loaf to make once you have cut up and cooked your pumpkin. It is incredibly moist and it will become a favourite.
This can be cooked, gluten free or with normal flour.
Spiced Pumpkin Loaf Recipe
1/2 cup coconut oil - melted
1/2 cup sweetener - honey or malt brown rice syrup
1/3 cup milk - almond, coconut or another.
2 eggs
1 cup cooked mashed pumpkin - cut up small and then cook in a small amount of water or steam. You don't want your pumpkin really wet. Then drain well.
1 tsp cinnamon
2 tsp ground ginger
1 tsp allspice
1 cup gluten-free flour ( see my recipe for made up GF flour or buy in a packet ) or use plain flour
1 tsp baking soda
1/4 tsp baking powder
1/2 tsp salt
Method
Oven 180 c - greased loaf tin
1 - Sieve all the dry ingredients together in one bowl.
2 - Mix all the wet ingredients together in another bowl.
3 - Mix all together making sure there is no lumps.
4 - Cook for 1 hour or until a skewer comes out clean.
Remove from tin and cool

Sieve spices and flour together. Mix eggs, pumpkin, milk, honey and coconut oil together.
Mix flour into the wet ingredients.
Pour into a lined loaf tin and cook.
Enjoy this moisture delicious loaf. No one will know there is pumpkin in it.
