Oven Baked Chicken and Roasted Vegetables - GF

I was busy in the garden today so the dinner had to be no fussy and delicious. I placed the prepared chicken drum sticks in the oven with the wedges, after 50 minutes I removed the wedges and place the yams and halfved brussel sprouts to roast. 

Once cooked I served the whole dinner on one big wooden board, Glenn had made me. Topped with sour cream and sprinklyed smoked paprika on top.

Oven Baked Chicken and Roasted Vegetable Recipe

Coconut oil for roasting.

Sour cream/ smoked paprika  for topping

6 - 7 Chicken drum sticks

1 egg / 1 /2  juice lemon / 1 cup almond milk - or any other milk. - mixed all together

Coating for chicken -  double this flour mixture if you want to coat it twice. I only coated it with one.

mix altogether

1 cup brown rice flour or plain flour

1 tbsp smoked paprika

1 tbsp dried oregano

1 tbsp dried sage

1 tbsp dried basil

1 tbsp onion powder

1 tsp chilli powder

1 tsp sea salt and pepper

Roasting potatoes -  enough for your family cut into wedges

Coating for potatoes -

Mix altogether

1/4 cup Rice flour

1/4 tsp cumin

1/4 tsp coriander

1/4 tsp tumeric

 Himalayan salt / pepper

1/4 tsp smoked paprika

Vegetables-

You can choose any vegetables, but I choose yams and purple and green brussel sprouts, halved.

Coconut oil / sea salt and pepper for roasting

Method

Oven 225 c 

1 - Coat chicken in the egg mixture and then the spicy flour mix. You can do this twice for a thicker coating. Place on baking paper. Then dribble oil over the chicken.

2 - Coat the wedges with oil and then the flour mix. Lay on baking paper for roasting.

3 - Place vegetables on baking paper, dribble over oil and sea salt.

4 - Place chicken and wedges in the oven for 50 minutes, or until the wedges are cooked and brown.

5 - Check the chicken, it may need 15 more minutes. Remove wedges and place the vegetables in the oven until cooked. Watch the brussel sprouts, they burn easily.

6 - By now the chicken should be cooked.

7 - Place all on a board topped with sour cream and sprinkle with smoked paprika.

After dipping the chicken in lay on baking paper or tin foil, dribble oil over them.

Lay out your vegetables, coat with oil and season.

This is a fun way to share a meal with your family. Top with sour cream and smoked paprika.
